I still think about that delightful goat. It probably would have come home in the car with us if a large fence hadn't intervened. We took a walk to visit the goats down the back paddock, and one of the young goats stuck to us like glue all the way there and all the way back, being patted all the while.

Then it was a wander around the gardens, an enjoyable time watching chooks scratching around and small kids having great fun being taught how to milk a goat. It would have been better if the festival programme had mentioned the need for folding chairs. Being first time visitors, we had no idea that we ought to have taken our own chairs, but managed to squash onto a wooden bench to eat our lunch. We opted for the platters, which had a selection of lovely goat cheeses, local meats, crackers and accompaniments. Whisk in the cheddar, gruyere and mustard. Place the pan in the oven and broil until bubbly and golden on top, about 3 to 5 minutes. Whisk into the cold roux and cook for 10 minutes on level 6 on the AEG induction cooktop. You can purchase truffle oil at wholefoods but if you are in a bind they sell truffle infused olive oil at Trader Joe's. For a golden topping, preheat the broiler to maximum, setting the oven rack to the upper-middle position.

While I am there I grab a baguette to use as the topping. It contains nutrients that are beneficial to your health such as healthy fats, proteins, vitamins and minerals. This will be enough for a double portion of the recipe. Goat Cheese with Truffles Zigante is known for its distinctive taste. I go to Trader Joes and purchase the smallest portion of TJ's Fontina, Grueye, Parmesan (already grated) cheeses. Definitely not a kid friendly recipe, this is adult mac and cheese.
